• To always comply procedures/work instructions and other quality assurance system as guidelines for all daily production operations.
• To check, monitor, operate and control the brewing, fermentation/storage and filtration processes of beers and yeast management according to specified procedures, work instructions and process/product parameters.
• To assist in carrying out the propagation activity of new yeast together with QC team according to approved yeast propagation planning.
• To ensure timely supply of bright beers of the required quantity and quality to all teams to meet production schedules.
• To carry out daily production according to the approved weekly brewing and filtration schedules.
• To efficiently carry out the cleaning (including CIP) and (first line) inspection, lubrication and maintenance of the plants and equipment according to cleaning frequency, inspection and maintenance cards.
• To monitor and control (daily, weekly, monthly) the usage of the production materials in order to prevent them from running out of stocks and to minimize losses and wastages and to optimize on the materials.
• To raise work orders and to coordinate with the Engineering team on all repair/maintenance works.
• To raise on-hold forms for all out-of-specification products/materials and promptly follow up and inform the on-hold to all parties involved.
• To proactively act on the daily production operations and to promptly discuss/report the production issues with the team members.
• To communicate closely with both inter and intra team members on work related matters/problems.
• To assist the Engineering team in attending to breakdowns of plant, machine and equipment.
• To be actively involved in trouble shooting and to assist in the starting-up of plant and machinery (both new and after overhauls).
• To do the preventive and breakdown maintenance as well as house keeping.
• To keep and maintain plant, machinery in good condition, cleanliness at all production times, especially after maintenance day.
• To relieve other production technician when required.
• To study, initiate, compile and propose work improvement measures on product quality, work performance and cost savings.
• To actively participate in daily, weekly and monthly production meetings among own/cross teams.
• To assist the Brewing Manager in setting brewing team's targets and objectives.
• To actively participate & implement new standards system.
